What a fascinating read!!! I too love potatoes, so maybe I’ll try the cold potatoes… Have to stock up on some more meat!!$$$$$$

Dr. H, thanks for sharing. CGM data often shows no glucose spike difference between freshly boiled and chilled potatoes (or other DIY "resistance" starches like bread or pasta). Fat, not chilling, blunts the spike. Some do report potato-induced inflammation as joint pain (lectins?) Here is an example: https://www.youtube.com/watch?v=YvJGvoJtokA

I’ve always read that once the potatoes are cooled overnight you can reheat them and it remains a resistant starch. I simply don’t enjoy cold potatoes. To combat the rabbit pooplets I take a magnesium supplement at bedtime. I do eat ceuciferous vegetables as I simply can’t imagine my food life without broccoli, cauliflower or Brussels sprouts. Thankfully, I’ve never been a cheese fan so that craving is never an issue. I haven’t lost tons of weight, about 8lbs, but I feel fantastic. At my age, 66, I’m running a small ranch in a very rural area, raising my own food. I believe that leaving the city was the absolute best thing I’ve ever done for my life.

Great tips! I have a question. Does this resistance starch trick work for other foods? Are cooked apples better than fresh apples?

Maybe it is the cheese...not losing any weight on carnivore after 2 months. Very disappointed about that, but, sleep, satiety, feeling stronger, all a win. Before carnivore, was keto diet for 1.5 years. Initially, lost easy 20 lbs going to keto. Definitely take magnesium and probiotics for regularity!

Very interesting read. I also love cheese. As my diet is mainly low carb I tend to lean on cheese a little too much. Did I mention that I love cheese? I haven’t really gained much weight but I feel it more in my energy and aches and pains. Maybe I’ll give it a try. More meat/protein and less cheese. It’s very easy to slip on your eating habits but when you do your body lets you know immediately. Pay attention to your body. I’ll start after Thanksgiving.

Never knew about the cold potato's, TY. I usually prepare most of my potato dishes a day before anyway, because they take the most time to make the day of.
