FYI:
I ate half the above for dinner tonight. The other half will be reheated tomorrow for dinner when I get home from work. Low Carb cooking does not have to be difficult, expensive or time consuming.
#IMWChallengePearl #1 : A little meal planning helps but so does always making a few extra servings for the next few meals.
While I enjoy cooking and find it both relaxing and a fun challenge, sometimes it is nice to just reheat something and chill with family at the dinner table.

I think a recipie book is a marvelous idea. It could end up having recipies for local favorites and innovative new cuisine! Leftovers is definitely great while on keto because the food is so enjoyable, but one thing that makes keto easier/funner is switching it up for different meals, different weeks. A recipie book could also help avoid burnout....if there is such a thing while on keto. I made keto broccoli cheese soup tonight. We ate it all before we remembered to take pictures. We followed a recipie that was too broth-y. It needed to be more creamy, and it also had too much cheddar cheese. Knowing this now, I'm exited to make the recipie again is a week or so with some changes.
Love getting recipe ideas and almost always cook with “planned overs“ in mind. Didn’t get a photo of this but here is a rough recipe. It was delicious.
Boneless chicken breast sliced thin
Dredge in egg, minced garlic, basil and oregano, salt and pepper
Coat in grated Parmesan cheese and a bit of almond flour
Pan fry in olive oil
Top with melted butter, minced garlic, equal parts lemon juice and chicken broth.
Serviced with roasted cauliflower seasoned with everything bagel spice.
