I made slow cooker beef stew for the #IMWChallenge .

Now it’s not as #Carnivorish as other meals but it’s still keto as 3/4 of the plate is the meat.
The #IMWPlate helps to put together a Low Carb-Keto-Carnivorish meal just by looking at your plate. No measuring or counting needed. The #IMWPlate is like eyeballing your plate to see if it meets the challenge.
The #IMWPlate is where at least 3/4 of your plate is made up of your protein/fat part of your meal and 1/4 or less is from natural non-processed carbohydrates such as fruits/veggies. I still prefer avoidance of grains as many people end up with inflamed guts from grains. This may not have been the case 100+ years ago before Big Food and Big Agriculture took over and changed not only farming practices but also the genetic makeup of grains and other plant foods. Perhaps another day we can discuss the pesticide Roundup or Glyphosate and all the health issues it may cause. If you want to know more about Glyphosate now do an internet search for Stephanie Seneff and Glyphosate. You can start here. But as you look further I ask you NOT to use Google, Yahoo or Bing for your search as I no longer trust their search algorithms. They tend to “hide” things that goes against their views, i.e. censoring. Use the newer search engines such as DuckDuckGo or Brave for now. #IMWChallenge Beef Stew - #OMG - absolutely delish.
Here goes the recipe:
Solid ingredients:
1 lb of precut grass fed stew meat from chuck roast.
2 ribs of celery sliced
1/2 carrot sliced
1 small-medium sweet potato cut into bite size chunks
1/2 sweet onion sliced
3-4 cloves of fresh garlic sliced.
Liquid ingredients:
2-3 tablespoons olive oil
1 cup water
2-3 tablespoons or more of Gluten Free Worcestershire sauce
2-3 tablespoons or more of Smoked Balsamic Vinegar
Spices:
Garlic powder
Onion powder
Garlic salt
Italian seasoning
Cooking:
In the Instant Pot sauté function add the olive oil to the pot. When hot add beef chunks and cook for 35-45 seconds per side and no longer than 2 minutes total. While still on sauté function add the celery, carrots, onions, garlic and sweet potatoes. Add all the spices, stir and let cook for a minute or two.
Turn off sauté function.
Add remaining liquid ingredients and stir.
Turn on Instant Pot slow cooker program.
Here is where it gets interesting.
The recipe I looked at and only used for cooking times instructed to put Slow Cook setting on Low for 6-8 hours or on High for 4 hours.
Well I must have bought a dud Instant pot, at least for slow cooking as it always seems to cook a whole lot faster. So I put the timer on 5 hours instead of 6-8.
2 hours later I smell a great aroma from the kitchen. I also hear some hissing coming from the Instant Pot. I canceled the program and took off the lid to check the stew. The stew was done. The meat was 160ish and the small amount of veggies were perfectly cooked thru.
I used a slotted spoon and removed the stew minus the gravy. I then put the Instant Pot back on sauté function for about 5-10 minutes to let the gravy boil off and get thicker. I then added the gravy on top of the stew and put it in the fridge as it was only 230pm and not time for dinner.
As with many stews when you reheat it later the flavors have had even more time to combine and mature. Let’s say there were zero leftovers. I will most definitely be making this one again, but I might pull out my 35 year old slow cooker that actual slloooowwwwwww cooks.

The beef stew looks amazing… I have actually used cut up radishes, skins left on, instead of potatoes. When they’re cooked the texture and taste it’s almost exactly like a potato and less carbs😃
