I made a roasted chicken Saturday night for dinner. I saw a recipe on IG that was just too simple.
Here it is if you want to try it.
It fits well with a Lower Carb, Keto or Carnivore lifestyle.
Preheat oven to 400 degrees with a cast iron pan preheating as well in the oven.
Season the thawed whole chicken with your favorite seasonings. I used salt, onion and garlic powder, smoked paprika, celery seed and some chimichurri.
Put the seasoned chicken in the heated cast iron pan wing side up. Cook for about an hour.
You don’t need to do anything else except check that the inner temp of the chicken hits 165 degrees. When the chicken is done leave it out for 5-10 minutes for all the juices to come out into the pan. Then spoon the juices all over the chicken.
The best part of this dish is its simplicity.
No added oil or fat needed.
The chicken was so moist.
The chicken jus, yes the chicken gravy was incredible.
My daughter who would love to be a food critic asked for seconds. She is a true critic as she has no qualms telling me when my meal is just so so.
Somehow I forgot to get a pic of the whole chicken when it was done, but here is a pic of the chicken on a plate with a small side of roasted cauliflower. Look at all that natural gravy.
This is the wing with part of the thigh which happens to be my favorite part of the chicken. I had seconds of the same cut of chicken. Yes, there are wings and thighs on both the right and left side of the chicken…..
My daughter had the drumsticks and remaining part of the thighs.
I think one night I will make this chicken again without the cauliflower and just eat more of the chicken. It was that good.
And so so easy…..

Yes!! High heat roasting in cast iron is the BEST. Totally agree how moist it turned out. For my husband I add a couple tiny potatoes & whole carrots to the roasting. He loved it 🙋♂️
