First a disclaimer. I have zero culinary training.
I am not a chef but I do like playing one in newsletters……
So here goes………………
CREAMY SMOKED SCALLOP SOUP
Ingredients:
1 rib of celery chopped
1/4 onion chopped
1/8 bell pepper (your choice of color) chopped
16 ounces Organic Chicken Bone Broth - I like bone broth as it has more protein and minerals than regular chicken broth
1 Package of precooked Smoked Scallops - I purchased these at Mom’s Organic Market
Organic Olive Oil
Heavy cream
Salt and pepper to taste
Directions:
In a medium soup pan heat some olive oil on medium heat. When olive oil gets to crackling add the celery, onion and bell pepper. stir for a few minutes until onion is almost translucent and the pepper and celery do not burn.
Add 16 ounces of Organic Chicken Bone Broth to the pan and mix everything up a bit. Let simmer for a 3-5 minutes but try to avoid a boil.
Remove the precooked smoked scallops from the bag and cut into smaller bite size portions for the soup. Reduce the heat to low. Stir for a few minutes just to heat up the scallops.
Remove from the heat, wait a minute or two and then add the heavy cream. The amount you use is dependent upon how creamy you like your soups. So start by adding a smaller amount, stir thru and check if it is to your liking. If not, add some more heavy cream and repeat until you get your desired consistency.
The soup will be hot enough so when you add the cream it stirs in nicely but you don’t want it to boil. You may need to heat the soup up a bit before serving if the cream cooled it too much.
Then serve and enjoy!
Obviously you can salt and pepper to taste.

You can always cook fresh scallops first instead of using the precooked. But make sure to add some smoke flavoring as that really adds to flavor.
If this was not a Low Carb Challenge I might add a small amount of white potato chunks to the soup, but that is a definite No-No during this #IMWChallenge.
