The Internet. That is the answer. Jobs that required movement became sitting at a desk typing on a computer. Then we added in the phone and so everyone is just on a device all of the time. So there's the lesson: get off the computer/tablet/phone and go outside!
My own weight gain has been even more dramatic. Forty-four years ago, I weighed just 50 pounds—now I’m a solid 180! Gosh, must have been all that seed oil in my salads.
I agree with Cindy's and Renee's comments. Also today's need for instant gratification with everything including our food. The chemicals and what ever else is actually allowed to be in our food. The false advertising of supposedly " healthy 'foods that is out of control. Way, way too many unhealthy fast food options out there.
Bottom line is INSULIN RESISTANCE is now widespread due to flawed policy which has worsened over time:

US nutritional guidelines emphasize grains, carbs over fats and protein.
Sugar industry interests sneaky messaging (really propaganda) that your body "needs glucose" which was meant to suggest that sugary sodas are actually good for you! Soda went from an occasional treat to a constant barrage resulting in widespread hyperinsulinemia, with the pattern set early in children.
Farm bill - Regulatory capture by profiteers and the congress members they bribe via campaign contributions.
Food guidelines - 75% of the committee is from profiteering food companies traded on the NYSE motivated by keeping profits up (health and common good be damned).
GMO’s and chemicals in our food, too much processed food, lack of Physical activity, too much take out, lack of home cooked meals, the level of stress due to over complicated lifestyle’s, excess medication. Really bad information regarding diet and exercise.
Processed foods and a whole bunch of unnecessary added chemicals and ingredients! In Europe and many other areas of the world out food is not even allowed to be sold over there.
Oops I accidentally sent the above before I was ready. I was saying that today most households need two incomes and so, with no one home to cook healthy meals and kids going to everything imaginable, off they go to grab something easy and as already mentioned, poisoning. Everyone is tired and stressed and trying to keep their heads above water. I need to repeat that food today is horribly unhealthy. Even wheat - there no longer are amber waves of grain. Did someone mention movement? Of course, but it’s worth another mention. Ok, I’m done for now. 😩
I think it is combination of factors: stress, reduced motion, less time to prepare healthy food, easier access to processed and fast good and a shift away from responsibility.

I also I think Robert Lutigs UCTV presentation on Fructose gives so much insight into this. The mount of sugar that's going into our food now is out of control!
The change from preparing our own food to eating pre-packaged, prepared foods with a thousand ingredients of which 999 are poisonous to our bodies.
