So the conference ended. I think 3 days in a row is more than enough. I am glad I attended. If anyone thinks I was not away and just playing hookey, here is my proof.
I connected with a few Low Carb docs and people I have been wanting to for quite a while.

Above pic is me and Dr. Phil Ovadia, a CardioThoracic surgeon, the guy you don’t ever want to need. Dr. Ovadias lost over a 100 lbs on Low Carb and has been a strong advocate ever since. He wrote a book, “Stay off my operating table”, where he explains how using Low Carb along with other healthy habits can prevent heart disease and stay off his operating table.
For those of you who still do not quite understand the Low Carb lifestyle, perhaps this quote may help.

So today I think I will just quote assorted things I heard that make sense and should make you think.

“I treat a lot of substance abuse patients. The substances are excess dietary carbohydrates, seed oils and chemicals in food.”
“Sugar/Excess carbohydrates activate platelet clumping”. —-Translation- This can lead to increased risk of blood clotting from eating carbohydrates/sugar.
“Persistent hyperglycemia causes endothelial dysfunction.”—- Translation- Persistent High Glucose levels cause the inner lining of your arteries to not work well increasing the risk for vascular disease.
“Adequate salt prevents high blood pressure” —-Translation - increase salt when on a Low Carb diet.
“We need to resolve Lipophobia”—Translation- we need to stop worrying about elevated cholesterol levels.
“Cancer cells ferment glucose for fuel. This is called the Warburg effect.” —- Translation- Most cancer cells can not burn fat or ketones for their fuel. Instead they ferment glucose without the need for oxygen. So one cancer intervention is to go very Low Carb. But if you go very low carb, yet still overeat, the cancer can still fuel itself. This is why Fasting has been heavily researched as a means of preventing/treating cancer.
“Cancer cells will not grow with Allulose.” — Translation- Allulose is a naturally occurring sugar that blocks fructose in the body. Allulose provides a mild sweet flavor and by blocking fructose may reduce the amount of sugar available to fuel cancers. This sounds promising but I am not quite there yet. Even though Allulose is a naturally occurring sugar substance, I don’t believe we have ever consumed Allulose naturally in the amounts it is presently being marketed. So it may end up being safe, but I am still waiting for some more research before giving a thumbs up. It’s not a thumbs down, but it’s not a thumbs up quite yet. If anyone has had any experience with Allulose use, please share the good or not so good in the comments .

Thanks for sharing all of the highlights from this conference. I really enjoyed Dr. Ovadia's book - one of the first that I read prior to finding you. I hate to say it though, he looks like maybe he's still a little overweight? Enjoy the sun - I'm big time jealous!
I’m encouraged to abstain from the cookie or brownie at night even though homemade and bump up the protein for a while. If there is a time in the future when I’d like to bake, I’ll look at allulose. I don’t know anything about it or have ever used it.
The two meals a day are working well for me and they are within an 8 hr span. What you eat in one big meal, I eat in two. I fill up quickly so spacing out the food within the 8 hrs seems to be better for me.
