So it’s a snowy day today with the Nor-easter finally blowing on outta here. I think we got about 6-8 inches. I’d like to thank my snow-blowing neighbor Jeff for clearing our driveway this morning. It is a good thing to have kind neighbors.
Snow can be annoying but it is pretty to look at.

Misfit challenge meals recipes
A challenge within a challenge is always fun.
I mentioned previously about an Organic food home delivery service we have been using.
Misfits Organic Food Grocer and Delivery Service
This was the organic food haul I received last week.
The challenge is to see who can come up with a low carb meal using any of these ingredients. You can also use some other ingredients from your pantry, just make sure the majority is from the pic.
The Misfits protein/fat sources to pick from include:

You can use any of the veggies shown in the pic as well.

Changing the subject for just a moment. I just finished reading another substack blog post from a writer in Canada linked here. I found it very interesting in that the author did an in depth analysis and critique of how COVID has been dealt with in many different countries. I originally started reading the post as it looked to answer the question as to “Where did the Flu go” during COVID and why it is good news that the Flu is coming back. Even more interesting is that the author’s hypothesis pretty much agrees with my thinking of the past few years. It’s not the shortest post, not the longest either, but I believe it is worth a read. As always you do not need to agree with anything anyone writes and you are free to make up your own mind based on your own daily interactions. Just keep your mind open and try to be as unbiased as possible and allow openness and transparency to guide your thinking.
We shouldn’t try to prove ourselves right. Instead we need to be open and honest with ourselves and others and get it right, even if it goes against our original actions and beliefs.

We get our meat at Rastelli's in Vorhees and our A2 dairy from Miller's Bio farm. Miller's does a delivery in Cherry Hill every two weeks.
Acme in Medford has very good grass fed lamb and Lancaster chicken at lower prices. On Wednesday's the Medford Shop Rite has flown in from Alaska excellent seafood at low prices also.
My son ordered for a holiday gift from Ohama Steak in Mt Laurel and it is said to be grass fed and it was the best beef we have ever had. They have excellent coupons and specials. I served the bacon wrapped beef with mashed/puree butter nut squash with butter...better than mashed potatoes!
